Why Barramundi?
The "Asian Sea Bass" — Redefined
Barramundi (Lates calcarifer) is native to the Indo-Pacific — found across northern Australia, Southeast Asia, and coastal India. The name comes from an Australian Aboriginal word meaning "large-scaled river fish." Chefs have prized it for decades. Malta is only just discovering it.
Why Chefs Love It
Mild, buttery flavour. Firm but flaky flesh. Skin that crisps beautifully under heat. Barramundi is what culinary schools call a "high success rate fish" — it's hard to cook badly. It holds together on the grill, pan-sears with an audible crackle, and absorbs seasoning gracefully.
How We Source It
We source from responsible aquaculture — Barramundi farms that use Recirculating Aquaculture Systems (RAS), dramatically reducing water use and environmental footprint. The result: premium fish available year-round, with a supply chain we fully control and trust.
How It Compares to Local Fish
Think European seabass (Spnott) — but richer, fattier, with an easier-to-crisp skin and less of that "fishy" edge. If you've enjoyed seabass in Malta, you'll find Barramundi a step up. More forgiving in the kitchen, more distinctive on the palate.
